Do this if you want the absolute best corn ever. This technique is so easy I have my son tend to it when I am prepping other ingredients.

This pairs really nicely with some spicy Brats or your favorite grilled meats. This is one time where burned is good.

Grilled Corn or Elote in Mexico

An incredible variation of this dish is Elote, grilled corn topped with mayonaise, chile and cayenne powder and cotija cheese. Serve with lime wedges.

How to

Pres-soak the corn in the husk in a large pot. Use the lid to ensure they stay submerged. if you are doing a lot put them in a cooler or sink for about an hour. Simply place them on a pre-heated grill medium-high for20-25 minutes. Turn the ears 1/4 turn every 4 minutes until the husks are charred black. You really need to push the char to achieve a nice caramel toast on the kernels. Serve with lots of butter, salt, and pepper. YES pepper belongs on corn. Enjoy!
