Traditional French quiche recipes rely on a basic pie crust and is cooked in a standard pie dish. This version says adieu to all the conventional norms and instead focuses on the core ingredients and uses pantry staples that you probably have on hand.
This can be as simple or as complex as you desire, sticking to the core three custard ingredients will get you there. Venturing off in different directions will lead you to exciting variations of your own. Mexican, Greek or Italian riffs would be great directions to explore. This is a nutritious vegetarian recipe at its base or a #keto meat lover's dream at the extreme.

Simple Crust-less Quiche Recipe - serves 8
Sticking to pantry staples makes this a dish that comes together in a flash and is ready for the table in an hour. This recipe is easily halved if you aren't into leftovers or are just cooking for one. Pre-heat your oven to 400° before assembling your ingredients and the oven should be ready once the dish is put together. Beat together the eggs, cream and dried herbs. Grease a 9 x 13 Pyrex glass baking dish or an 8 x 8 if you have halved the recipe. A word on greasing, this can be butter, PAM, EVOO or bacon grease use what you like or have on hand. Pour the broccoli into the dish add half of each of the cheeses, then the peas and meat. Cover with the custard mix and add the remaining cheese to the top and gently agitate to ensure everything is mixed together. bake until center is set, about 40 minutes depending on your oven.
Custard base
12 eggs
1 pint of heavy cream
4 oz extra sharp cheddar
4 oz of your other favorite cheese - Gruyere or smoked Gouda are great
Base ingredients
1 bag of frozen broccoli usually around 1 lb
1/2 cup of frozen peas more if you like
1 cup of chopped ham - Kielbasa or browned sausage are also great
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. freshly ground black pepper
1 tsp. thyme
1 T dried onion
